Planning my Thanksgiving meal with a little help from my friends from Gooseberry

The new Harvest Table is full of yummy recipes and ideas. I just might be making this Mashed Potato and Turkey Soup with the leftovers. 2T butter 1 yellow onion, diced 2c. sliced mushrooms 1 carrot, peeled and grated 1 t. thyme 4c. chicken broth 3c mashed potatoes 2c cooked turkey Melt butter in large pan, add next four ingredients and saute until onion is translucent. Add broth and mashed potatoes, stirring until broth is smooth. Add turkey, Cook until hot. Serves 6 Enjoy!
